Cosmopolitan Cuisine. Chinese and French restaurants in Saigon and San Francisco, 1850‑1910

At the end of the nineteenth and the beginning of the twentieth century, French and Chinese restaurants in San Francisco reached out to people of different backgrounds, to maximize their clientele. In colonial Saigon, Chinese restaurants similarly attracted multicultural patrons, whereas French restaurants passed up opportunities to win Asian customers, instead creating exclusive dining environments for the French. San Francisco’s reputation as a great restaurant city grew in part from its residents’ openness to trying new cuisines.
