This paper deals with the evolution of the relation between urban populations and food, through the analysis of a specialized food trade, the cheese and dairy shops in France. The renewal of this commerce activity since the 1990s is explained by the desire of consumers to be close to the retailers, but also to the producers, through the retailer, and to the movement of “gastronomization” of some food products, among which especially cheese.
